While going around Hong Kong like every tourist we were everywhere to see what was happening in a different country with different cultures.

We came accross this man whose place of business was the sidewalk, making these long doughnuts which he first made by rolling them up then fried them in the hot oil in this huge wok.

One of these doughnuts with a cup of sweet soya for breakfast is a great way to start off the day, and became one of my favorites. Afterwards back in Canada I tried having this for breakfast in China town and it was never the same, always too greasy and tasteless.

I know there is half a man in the way, I tried cloning it out but made a mess so I left it. I should have cropped closer to the cookbut then I would be told it was too closely cropped. The idea was to show this doughnut maker

I find this fascinating. It is wonderful to be a scan and from such a long time ago. I love the light and you still have amazing detail. I like the diagonal line of the counter and it is well composed. I might have cropped a bit of the person on the right out and cloned out the hand, but this is still a great shot. Very well done! I think this definitely shows 1982 with the faded look. It is actually interesting to see how as photographer you were fascinated by the dough nut maker. I believe this long dough is what we are all familiar with, even in Malaysia sold by not justice Chinese traders, but Malays are now learning the trick and making/selling them too. They are a little salty and is best served with coffee or white milked tea, not really good with black tea.

Hi Dot.
This is great. In Mandarin, these are called "you tiao", which literally means "oil stick". Sometimes, older men are referred to as "lao you tiao"--"old oil stick". It's not a compliment--the equivalent meaning in English might be something like "slimy".
As to your cropping dilemma, I like it fine the way it is, but if you cropped it as a portrait rather than a landscape, you could really focus attention on the cook.
