[Note Guidelines] Photographer's Note
Tabbouleh is a Lebanese salad and is often served as part of a meza appetizer assortment, as well as on its own. Usually it is served before the main meal to stimulate the appetite. The tabbouleh is often served with whole Romaine lettuce leaves.

Tabbouleh is also popular in Brazil, where it is called tipili.

Its primary ingredients are burghul (Crushed wheat. This is from the Lebanese word meaning little bumps, basically. In Arabic, it is pronounced 'burghul'., finely chopped parsley, mint, tomato, scallion, and other herbs with lemon juice, olive oil and various seasonings, generally including black pepper and sometimes cinnamon and allspice.

Tabbouleh is sometimes called the fairy salad, usually by grateful vegetarians with happy tastebuds. It is undoubtedly the most popular Lebanese salad, claiming the honour of being Lebanon's national dish.

Highly recommended for dieters as part of their course and it is a very healthy food.

Ingredients:

4 bunches of tender flat parsley
4 large, ripe tomatoes
2 large, ripe lemons, juiced
1 small/medium white onion
2 tbspns fine burghul (Crushed Wheat)
1 tspn chosen spice(s)
1 tspn salt
20cl extra virgin olive oil

Hussein, I love your note - very instructive.
Composition of the photo is rather nice, too, but the use of direct flash in food photography results in really flat images. Try to use natural light, I believe it would make this speciality look tastier and give it another dimension.
