When the weather gets warmer, I start eating lighter foods. This is tabouli, one of my favorite salads. I call it "tabouli-sa" as I add artichoke hearts, Greek Olives, and celery.

In the photo, I cropped a portion of the top, added contrast, color to a parsley leaf, resized for upload.

Tabouli-sa (Lisa)
Serves 4-6

3/4 cup boiling water
1/2 fine bulgur
1/2 cup minced parsley
1/2 cup finely chopped green onion
1 cup diced tomato
1 cucumber, seeded and diced
3 tablespoons olive oil
2 tablespoons lemon juice, or to taste (I add more :D)
1 tsp. sea salt, or to taste
Pepper to taste
chopped green and Kalamata olives to taste
1/4 cup chopped celery
1/2 cup canned artichoke hearts (not marinated)

Pour boiling water over the bulgar, cover, and let stand about 30 minutes until tender and water is absorbed. Add the chopped vegetables and toss to mix. Combine oil, lemon juice, salt, pepper, Add to bulgar mixture and mix well. Chill. Serve and enjoy.

Taboulé is a nice, fresh dish indeed, Lisa. Very tasteful, as is this picture you present to us. A nice 'product' shot, and good enough for any cook-book ;o).
