[Note Guidelines] Photographer's Note
Summer time! The strawberries of summer are here and I love them. So naturally sweet and healthy for you. It's very hot here in GA, so I like to have muffins in the freezer waiting to eat for breakfast. That way, I don't have to heat my kitchen with the oven!

I added a little contrast, resized and sharpened for upload.

Strawberry muffins:

* 2 cups flour
* 3 1/2-teaspoons baking powder
* 1/2 teaspoon salt
* 1/2 cup plus 2 tablespoons sugar, divided
* 1 egg
* 1 cup milk
* 1/3 cup vegetable oil or melted, cooled butter (I use the butter!)
* 1 teaspoon vanilla
* 1 cup chopped strawberries
* 1/4 teaspoon cinnamon

PREPARATION:
Preheat oven to 375 degrees F. Grease 12-cup muffin pan. Combine dry ingredients, flour, baking powder, salt and 1/2 cup sugar with a wire whisk. In a separate bowl, combine wet ingredients, egg, oil and extract.

Add strawberries. Combine wet and dry ingredients only until moistened. Spoon batter into muffin cups. Combine remaining sugar with cinnamon and sprinkle over batter. Bake for 20 to 25 minutes.

*For huge muffins only fill 6 to 7 muffin cups.
For large muffins fill only 9 muffin cups.
For regular to small muffins fill all 12 cups.
Please be sure to half-fill empty muffin cups with water to ensure even baking.

For extra special muffins, top each with a strawberry slice or a few blueberries for the red, white and blue touch for patriotic holidays like the Fourth of July.

Ingredienti per 12 muffins

Bicarbonato - la punta di un cucchiaino
Burro - 180 gr
Farina - 380 gr
Latte - 250 ml
Lievito chimico in polvere - per dolci 1 bustina
Limoni - la buccia grattugiata di 1
Sale - 1 pizzico
Uova di gallina - 2 intere e 1 tuorlo
Vanillina - 1 bustina
Zucchero - 200 gr

Accendete il forno a 180°.
Fate ammorbidire il burro a temperatura ambiente e poi sbattetelo (magari con l’aiuto di un robot da cucina o con uno sbattitore elettrico) energicamente assieme allo zucchero, alla vanillina e al sale per qualche minuto, fino a che il composto risulti cremoso.

Rompete le uova in una ciotola e sbattetele con una forchetta assieme al latte; unite il composto (poco alla volta e sempre sbattendo) alla crema di burro e zucchero e continuate fino a quando la consistenza risulterà ben liscia, gonfia e omogenea.

Mischiate e setacciate in una ciotola la farina e il lievito e uniteli poco alla volta al composto, fino a che il tutto risulterà cremoso e senza grumi.
Mettete l’impasto a cucchiaiate negli stampi da muffin (o nelle pirottine) preventivamente imburrati e infarinati fino a riempirli per ¾, e poneteli in forno per circa 20-25 minuti.

A cottura avvenuta dei muffins, che dovranno risultare dorati, spegnete il forno e lasciateli riposare lì dentro per 5 minuti a sportello aperto, dopodiché potrete estrarli e lasciarli raffreddare completamente.

Consiglio

Se volete potete cospargere i muffins con zucchero a velo, oppure, appena sfornati, glassarli spennellandoli con del burro fuso e poi cospargerli con un misto di zucchero e cannella.

Oh man I'm so hungry...this really ruins my diet ya know! HAHA! Looks so delicious! Could be a little sharper, I see a blur, but that's ok, that way it won't tempt me as much HAHA NOT!!

What are you trying to do to me, I have just got in from work and had tea and seeing your post I am hungry again.
I like the composition with the close crop and the colours but the focus is a bit off, it doesn't stop em lookin good though.

Strawberries for breakfast, yummie and healthy! Muffins for breakfast: yummie and... less healthy ;o).
Nice creation Lisa, will not do for a cook book I guess (the products are not shown fully) but it sure is an appetising shot!

I swear, Lisa - more food!!! Very nice composition the way the strawberries are arranged around the muffins. The reds and greens of the berrys are warm and the texture of the muffins comes out clearly. Informative note -- if you don't want to shoot photos of food for a living, maybe you could just make the food!

Oh boy.. that really look good to eat.. but pity the photo is a bit oof.. still it is very nice to see the colours and how the muffins look like, excellent recipe, will give it a go when strawberries is in season!!!
