For all of my Italian friends, those that like to cook, and my TL Italian teacher!! Cooking is a passion of mine and I'm always cooking something that's different. Greek, Polish, German, Russian, Spanish, Mexican, etc.... There are very few foods I do not like. This recipe was so easy I thought I would share it with you.

I labeled this HPP as I did so much with the frame, gamma, highlights, contrast, brightness, etc... Just played with it a lot! Hid a copyright, that's really tiny (It's just for the heck of it...my little amusement):)

Here's the recipe: (from Mario Batali's cookbook)

Fettuccine with lemon, hot peppers and pecorino romano

2 tablespoons. extra-virgin olive oil
1 medium red onion sliced thin
1 teaspoon. red pepper flakes
3 jalapenos, seeded and cut into thin slices (I used 8 slices from jarred jalapenos...and it was hot enough for me. I diced them)
zest and juice of 3 lemons
8 tablespoons (1 stick...in U.S) unsalted butter
salt & pepper to taste
1 1/4 pounds fettucini
1/2 cup fresh grated pecorino romano

(not in above recipe, but I added steamed broccoli and a bunch of Italian parsley)

Cook pasta while making sauce.
Sautee onions and red pepper in olive oil until translucent. Add jalapeno and sautee 1 minute. Add lemon zest and juice, bring to boil, and boil for 1 minute. Remove from heat,. stir in butter, season to taste. Toss the hot pasta into pan with lemon mixture return to medium heat, and mix well, stirring gently. Add the pecorino and toss quickly. Transfer to heated serving platter. Serve Immediately.

I think this is too spicy for children!

Hope you enjoy it.

Hi Lisa,

This is inviting..

Fine presentation.
The PP is excellent.

Always the best for you :)

well Lisa.. this is not really "fettucine al limone".. i can assure.. that it's more easy to prepare them.. less ingredients.. i suppose in USA u have a strange idea of what the "pasta" must be!! ;))
however if u came in italy it'll be an honor for me.. to cook for u something really special.. i promise!! as "bucatini alla matriciana" or "spaghetti alla carbonara"
however it's "Fettuccine" not "Fettucini".. the framing is correct!! but more specific and correct is to say "Tagliolini al Limone".. the classic!!
i have really smiled about your shot.. if u are not offended by my corrections.. i would like to tell u that you are great.. and this shot+note is great too!! many thanks ;))))
ciao Marco

Hi Lisa,
This looks so delicious and beautiful. It could very well be the cover of a Martha Stewart's magazine. And complete with the recipe - got to cut/save this. You are now a bona fide threat to puffy's reign as TL's supreme food photographer. My best wishes to you on a very muggy day in Wash D.C.
Danilo
