a super easy and fun cake recipe 'cause you can vary it in so many ways -- make it as "down-home" or as "fancy" as you like. I prefer the pineapple in juice as it makes the cake not so sickly sweet. Also, routinely halve the frosting recipe for the same reason -- its makes for a thinner layer, but you don't have the cloying sweetness that can drown out the flavors. ***NOTE: the GINGER is what sets this recipe apart from other pineapple cakes. In fact, I would recommend adding it to lots of pineapple recipes, including pineapple upside down cake -- just adds another dimension of flavor. And of course, you can bake in virtually any size pan you want to, just watch your cooking time, accordingly.
Foolin' around and experimenting with the macro a few weeks ago. hand-held, natural afternoon light from open door
On each photo: adjusted levels slightly; added poster edges filter once on the default setting; added borders w/image/size/canvas thing. That's all I did on the pics. Then opened a new file, copied pictures into it; added text; resized, usm, saved to web. Bon appetit!
P.S. the cake is also good with candied ginger or ginger preserves on top of the icing.
I put cake pics in the workshop 'cause they are a little bigger than the ones on the "recipe card"

Thanks CK, I copied out the recipe, and your notes. Great idea for recipes.
The cake looks great, I only hope it isn't too hard to do. Perhaps you could come over and show me how to make it??
