According to this informations, you can see that you have to use a fast speed and a small aperture to get the drop in focus.
Regarding your question about the balance between smoothness and crispness, I only let the default settings on the camera, and try to improve the pict under PS with the filter "unsharp mask" wich usually gives good result. I also play with the levels and/or contrast.
