The shutter speed is all dependant on what lens I'm using. My 'big' lens I'm using now I try to keep the S/S above 1/250, but more than often with motocross action shots I try to keep the f numbers as low as possible to get a nice background blur. Just practice your shots, and (as with this picture) one will just make you stop and think :o)
