No, you don't necessarily need to use 3 separate exposures, you can use a single RAW file as I have done here. But you do get noise by using just the one, and that's caused by adding +2 stops exposure to the RAW file to get the 'high' exposure. As you are probably aware, adding loads of exposure compensation to a RAW file add noise. If I had used proper bracketing with 3 separate images, there would be no need to do digital compensation, so no noise.
