(7431) | In continuing my series from the Redwood Hill Creamery, this is a shot of Camillia Cheese that is in the same curing room seen in yesterday's post of Gravenstein Gold Cheese. The cheese in view here is in its early stages of aging/curing in an environment where temperatures and humidity controlled for proper mold growth. Further down this row of racks were cakes of cheese that were covered with a fuzzy white mold. I found it hard to get a good shot of them because they all looked blurry:)
